Asian Style Cucumber Salad is so easy to make.  And you can have it on the table within 15 minutes or so. That is a perfect recipe for healthy weeknight cooking!

There are days when I just don’t have time to cook or create a complicated dish.  On those days, I enjoy knowing that I can still get a healthy meal on the table for my family in a hurry.

The idea for this salad is based on a salad that my German grandmother used to make.  I can still see her standing in the kitchen slicing cucumbers so thin you could almost see through them.  Of course, I use a mandolin or my spiralizer.

Asian Style Cucumber Salad

Does your family love Asian food?  My family does, so I am happy to make it for them  every couple of weeks.  The mix of sweet and tart flavors in Asian food is one of my favorites.

While I was in the pantry pulling out the ingredients I use to make my Oma’s cucumber salad, I saw my bottle of rice vinegar.  The wheels began to turn.

The next ingredient I grabbed was the sesame oil.  I use a combination of these two ingredients when creating an Asian dish, so I wondered if they would work for a salad.  I mixed the two together, added a little honey (my Oma used sugar) and tasted it.

I knew at first taste that the Asian Style Cucumber Salad would be a hit with my family.

A quick and easy salad made with cucumber and Asian flavors
Ingredients
  • 1 English cucumber
  • 2 Tablespoons rice vinegar
  • 2 Tablespoons sesame oil
  • 1 Tablespoon honey
  • 2 Tablespoons sesame seeds
  • 2 green onions, chopped
  • Salt
Instructions
  1. If you have a Spiralizer, create “noodles” from the cucumber. If you do not have one, slice the cucumber very thin. Place the cucumber in a medium size bowl.
  2. In a small bowl mix the rice vinegar, sesame oil and honey.
  3. Pour over the cucumbers. Salt to taste.

Cucumber Salad with an Asian Influence

So, the next time you are in the grocery store, pick up a couple English cucumbers.  I am sure you have the rest of the ingredients in your pantry.  This salad goes well with most any dish.

My family enjoys it with grilled chicken.  The sweet and tangy cucumbers go well with any main dish.
